Quick and Simple Fresh Spring Salad

This salad is healthy, a great side dish - or a big lunch - and can be substituted a variety of ways in terms of vegetables used and what you have on hand. It's simple, refreshing and made using ingredients around the kitchen.

Also, I'm a strong believer in making one's own salad dressings and accoutrements so that they're healthier, don't stand in the fridge forever (yes, I'm talking to you: relish and bacon ranch dressing from two years ago) and that way it's also a little cheaper in the long run.

Total time: 10 minutes

Yield: 2 large servings

Ingredients:

4 leaves iceberg lettuce

2 mini cucumbers

10 cherry tomatoes

1 cup microgreens

2 tablespoon balsamic vinegar

2 tablespoons olive oil

1 teaspoon dijon mustard

1 teaspoon honey

1/2 teaspoon salt

1/4 teaspoon pepper

Goat cheese as garnish

Instructions:

1. Chop the lettuce and cucumbers

2. Add all the vegetables into a bowl

3. Mix vinegar and oil, mustard and honey until smooth. Add salt and pepper.

4. Serve and garnish with crumbled goat cheese
