Best Banana Bread

I love banana bread especially since winter is coming and all I want to do is to bake. My mom makes this every time our bananas start to go bad. My favourite way of eating it is warm with a little butter spread over a slice - delicious! This recipe is simple, requires little time and can be done without a mixer!


You can customize the recipe by adding a variety of things such as a cup of chopped nuts or chocolate chips. The amount of sugar is also variable - use the kind of sugar you want and as much as you need. You can even make muffins instead by pouring the batter into a muffin tin. It's up to you!


The best bananas to use for this are the over-ripe mushy kind. The mushier the banana, the better and smoother the batter will be.


Prep time: 10 minutes

Total Time: 1.5 hours

Yield: Makes one loaf


Ingredients:

2 to 3 very ripe bananas, peeled

1/3 cup butter, melted

1 teaspoon baking soda

Pinch of salt

3/4 cup sugar

1 large egg, beaten

1 teaspoon vanilla extract

1.5 cups of all-purpose flour


Instructions:


1. Preheat the oven to 350°F and butter a 4x8-inch loaf pan.


2. In a mixing bowl, mash the bananas with a fork until smooth. Stir the melted butter into the mashed bananas.


3. Add the baking soda and salt. Mix well.


4. Stir in the sugar, beaten egg, and vanilla extract. Mix well.


5. Pour the batter into your prepared loaf pan. Bake for 50 minutes to 1 hour or until a toothpick inserted into the center comes out clean.


6. Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving. Slice and serve. (A bread knife helps to make slices that aren't crumbly.)


This banana bread is great for brunches and for breakfast with your tea or coffee. You can serve it warm with butter alongside some fruit for a sweet breakfast that's a lot less hassle than pancakes or waffles. Alternatively, you can slice the whole loaf and cling wrap each piece - breakfast to go, ready.
