I personally love coleslaw. It's good with virtually anything at the dinner table. Or at lunch. And in the summer. Try out my version of this coleslaw for a creamy and quick side meal! Pro tip: add it to a slider for ultimate goodness! (Recipe coming soon!).
Ready in: 10 minutes
Yield: 4 servings
Ingredients:
1 coleslaw mix of choice
1/2 cup mayonnaise of choice
2 tablespoons sugar or sweetener if vegan
1.5 tablespoons lemon juice
1 tablespoon apple cider vinegar
1/2 tablespoon Dijon mustard
1/2 teaspoon ground pepper
1/4 teaspoon salt
Directions:
Whisk mayonnaise, sugar, lemon juice, vinegar, pepper, and salt together in a bowl until smooth and creamy.
Work coleslaw mix into the dressing.
Adjust ingredients to your taste if required.
Refrigerate until serving hungry guests.
And there you have it, my favorite way of making coleslaw. Bonus points if you took the time to chop up your own cabbage and carrots for it but store-bought mix works just as well and twice as fast!
